What is specialty coffee?
Specialty coffee is evaluated across green-coffee quality, roasting, brewing, and the cup itself. At Clay, the term means coffees selected and roasted for clear, distinctive flavor and consistent quality.
How do I brew my coffee?
There are many ways to make a great cup. Grind just before brewing, start with fresh filtered water, and use a consistent coffee-to-water ratio. Adjust the grind and ratio to suit your brewer and taste.
Is your coffee fair trade?
Sourcing details vary by coffee. We only publish relationship, trade, sustainability, or certification claims when we have current documentation for that lot. Check the product page for the details we can verify.
Is your coffee organic?
Organic status is product-specific. If a current organic certification applies, it will be identified on the product page and label.
What is the roast level of your coffee?
We offer a variety of roast levels from light to dark. Each coffee is roasted specifically to bring out the best flavor attributes for that coffee.
What's the shelf life of coffee?
Our recommendation is to brew within 60 days of its roast date.
What's the best way to store my coffee?
You can certainly store coffee in the sealed Clay Coffee Co. bags, in a cool, dark place. You might choose to use an air-tight container to reduce oxidation which promotes a longer shelf life.
When will my order ship?

Because coffee is a consumable product with a limited shelf life, we are unfortunately unable to accept returns or exchanges except under certain circumstances.
